AMAZING ADOBO FEATURED IN JEDDAH PCG’S CELEBRATION
OF FILIPINO FOOD MONTH

18 April 2021, Jeddah – The Philippine Consulate General in Jeddah (Jeddah PCG) featured all-time Filipino favorite dish adobo in a live cooking show called “Amazing Adobo: From Version One to Sawa” on 18 April 2021. The show is in celebration of Filipino Food Month or Buwan ng Kalutong Filipino.

The program which was led by Master Chef Roger Cabacang, owner and founding member of the International Center for Culinary Arts and Hospitality Management (ICCAHM), demonstrated three (3) types of adobo dishes namely seafood adobo, chicken adobo, and vegetable adobo—all using the distinctly “adobo” ingredients vinegar and soy sauce.

Jeddah PCG Consul and Acting Head of Post Mary Jennifer D. Dingal said that the adobo, with its recorded existence during the pre-colonial period, is very popular not only in the Philippines but also in the different parts of the world, with at least 32 documented adobo dishes. “The adobo reflects Filipino adaptability and flexibility in the unlimited ways of cooking it, depending on one’s taste and preference,’ Consul Dingal added.

The program was graced by celebrity chef Grand Master Chef Thomas A. Gugler, President of the World Association of Chefs Societies, who gave his take on the adobo. He said that the adobo “is such a flavorful dish, whose ingredients when combined and cooked properly form one well-blended and delicious dish which Filipinos should be proud of.”

Chef Daniel Mayor and culinary enthusiast/blogger Mr. Falco Dingal also shared their thoughts on the adobo dishes prepared.

This year’s Filipino Food Month celebration has the theme “Iba’t ibang Luto, Pinoy ang Puso,” and aims to celebrate, promote and preserve local cuisines and the culinary traditions that come with it. In this time of pandemic, the celebration also recognizes the various heroes that help make food available and accessible to the Filipinos.-End-
